Tasted blind. Tawny color with clear rims. Amazing, sweet nose. Notes of sour cherry, asian spice, mocha, sois bois, dark earth and some salt. Hearty in the mouth. Great structure. Debate ensues about the age of the wine, and my guess is 90 Dujac CdlR. Tells you how good this ~50 year old juice is. Got better over the night. Peacocks and prances about. Can still smell this the next day. — 14 days ago
Nose has stuck match, candied pineapple, vanilla candy (pina colada?), warmed lemon peel, lemon meringue with faint moist chalk notes.
Palate has warmed lemon curd, chunky vanilla notes, almond cake, lithe with a medium finish.
Decanted 3H. $60 Costco.
Not inspiring at this date, incredibly youthful with likely two decades in front. Yet, a solid pair with grilled Steelhead Trout this evening. — 2 hours ago
Sauvage
DAY 1
Served with the Vinloq System
👃Whoa! Rustic with cured meats, earth, leather, blue/black fruits, charred wood, & garrigue. Love this💕
👅Purple fruit, olives, garrigue, licorice & smoke. Rich and savory. Bold and delicious. Old world/old school. Bring on the grilled meat🥩
Remaining wine was Slow Decanted in my refrigerator
DAY 12
👃More pretty and slightly less wild now
👅More composed and maybe less fruit forward
Some may prefer this with more Slow Decanting to add more elegance and tame the beast a little, but I prefer the full-on sauvage form👍

This was delicious, and a winning blind for me. Having a baseline on the table definitely helped. Although less sweet and intense, I felt the JM Millot was in the same genre as the Métras, with similar texture, floral lift, minerality, and red fruit profile. It was the difference in fruit sweetness that gave it away as being from greater Burgundy, whereby Pinot Noir usually appears less sweet than Gamay to me. The village was definitely a lot harder to identify which made sense upon the reveal - when in doubt, it’s probably from one of the lesser communes (or Morey lol!). Fine, fresh, and energetic, I would have drank a lot more of it if not for the other wines on the table. Another to revisit. — 7 days ago
Clear medium gold that’s strikingly attractive. The nose is so pretty and deep with lemon and herbal aromas immediately. There are some almond notes after a bit of time along with delicate flowers. The chalk here is incredible and long. Peaches and pears, with apples and moist limestone.
The word that instantly comes to mind with this champagne is purity. It’s so pure, so alive, so vibrant. And such a good pure representation of the terroir. From Oiry in the Côte des Blancs and based from 2016 vintage. This is an intense wine and probably not for everyone, but it’s so charming and precise. Beautifully racy acidity and exquisite structure. Fresh as hell and sharp, in that good way.
That Grand Cru fruit struts its stuff in the mouth. The chalk just screams at you until you fall head over heels in love. The citrus begins to shine along with more almonds and toasted bread. Long finish with a small bite of spice. Superbly spectacular. A real gem of a champagne. — 9 days ago
Le style de la maison est là avec cette minéralité et pierre à fusils, du fruit blanc aussi, intense en bouche mais avec de la finesse, une belle longueur, très très belle réussite. 92-93
Very PYCM in style, gun powder, minerality, salinity, gorgeous white fruit also, intense and with a nice rich texture but the acidity balances it out, very very good. — an hour ago
Deep, rich and ripe nose of loads of stones, black cherry, dark roses, violets, earth, bittersweet cocoa, and that classic Pommard stoniness. Ultra deep. Almost like a compote on the nose. Palate is dark, juicy, sleek and slippery. Super concentrated but never heavy. Terrific, delicious fruit that is backed up by superb stoniness. Exceptional purity and wonderful freshness and balance. This is a brooding bottle of wine that really balances power, ripeness and grace. This needs some air and i’ll be back but truly a phenomenal wine. — 2 days ago
Had this at a tasting and bought several bottles, aged well, just opened last one. Aged for about 12 months in French oak barrels (15% new). Ruby, brown edges, with aromas of red and black stewed fruits and complex spice. On the palate, flavors of layered fruit, ripe black cherry and raspberry with cedar, tobacco, herbs and nutty notes. Full soft tannins, balanced acidity, long ending with fruit and earthy character. Outstanding! Worth the wait! — 5 days ago
