This was all part of our Sake Day 2025 experience. We only tasted 60ish sakes out of an estimated 450, so a small fraction of what was available. While I attempted to rinse the glass with water and stay hydrated it’s difficult to fairly rate in this environment and I use it solely as a time to try a wide variety and interact with the brands. Jumping back into the pond with the Cayuse Bionic Frog!

1 hour decant. A marvelous deep dark purplish magenta color. On the nose: Inviting nose of dark fruit, herbaceous, smoked meat, slight "Cayuse funk"(luv it), chocolate espresso, bacon fat. Taste: powerful, balanced, savory wine with dark cherry, raspberry, earth, pepper, gamey, minerals, orange peel, and a nice medium plus finish. YUM!!! — 9 months ago
