Nose is elegant brioche. A hint of lemon perfume.

Palate is mineral. Elegant richness. A hint of salt. Lemon oil. Quite good.

Consistent with my last notes, 6 months prior, only change today...bubbles are light in the glass, but palate and nose are solid. 🤷‍♂️
On the top end of the Fass Selections Champagne offers, and still worth the price; last bottle.

An unusually warm December day (55°F) today, so we're relaxing in front of a fire in the chiminea, peaceful.

Prior notes:
Nose has toasted nuts, grilled bread, oxidized red apple, day old lemon pith, golden raisin and apple turnover with sugar glaze.
Palate has lively acid, delicate iodine over green apple, warm honey drizzle on toasted challah bread and delicate toasted oak notes. Long and powerful finish, pure, emotional enjoyment.

palate as above but add minerality, limestone chalkiness, and tonic ~ as well as golden sultanas to the broad fruit profile

Wow. Awesome.

Almost some sweet yeast thing on the nose. Not actually sweet.

Palate has great fruit. Very ripe for champagne. Not overripe but rich. Excellent deliciousness
