A very intriguing bottle from the strangest of vintages. Dom. Chev. Blanc is flat out one of the greatest white wines in the world, and they produced a honeyed, full bodied drink that took quite a while to open, and showed no signs of age. The acid seemed low (no surprise for an 03) and the finish was not endless like it usually is, but the wine had a ton of breed none the less. I think it was best with the inventive scallop tostada that we had as an appetizer. — 10 years ago

Living high on the hog with tartufo bianco and Dom Chev Blanc! Cinnamon prepared a lovely risotto and decanted this an hour ahead- always a good call with top drawer white Bordeaux. This rich, generous bottle had honeyed Semillon flavor and texture, and seemed to get more focussed as the evening went on. — 10 years ago

Wilf Jäger bottling with vines closer to Chev Mont. Beautiful wine starting to lose youthfulness and pick up, caramel, nougat, savory character. Still focused but secondary flavors emerging. — 8 years ago

Mellow with a gorgeous golden color. Pairs beautifully with Chilean sea bass and veal shank. Buttery but not overwhelming. Perhaps not a good “Chardonnay”. I don’t drink chardonnays but I really like this. — 3 months ago
