@Delectable Wine : This is Domaine Les Monts Fournois’s Vallée 75 Mois de Cave - Premier Cru NV de Luxe. I didn’t see it in the database.
From winemaker Juliette Alips (Louis Latour, GD Vajra, Louis Roederer), cousin of the Bereche brothers (who are helping consult).
I love any and all things by Bereche, so when this new producer became available to try, I bought this as well as the vintage Grand Cru Cramant (which I posted a month or two ago).
As the name suggests, this receives 75 months on the lees. Base 2015, disgorged Sept ‘22. Blend of Pinot Noir (70%), Chardonnay (20%), and Pinot Meunier (10%). What I enjoyed about this over the Cramant was how Bereche-like it was. Powerful, beautifully ripe, textural as expected from the extended lees contact. Spiced golden apple, Mirabelle, layers of ripe and exotic yellow fruit before channeling the darker red berry fruit. Kiss of toast and sea spray at the finish. Wears its 5.5g/l dosage really well. I enjoyed this quite a bit. 93+ — 3 years ago
Wow, was this good! Opened alongside a 2008 D’yquem and a 2009 LaTour Blanche after an evening of champagne.
This is Antica Terra’s first dessert wine, and two renditions were made (both 100% Chardonnay). The first became ice wine (this one), the other dessert wine was made with the fruit held in baskets, with air space around each cluster, to continue ripening off the vine for an additional month.
In the company it was in, this stood out. Richly golden in the glass. Extremely fragrant showing notes of honeysuckle, bright orange marmalade, ripe peach, sweet lemon cream, and a little brown sugar. Not cloying in any way on the palate, it showed a richness in between the D’yquem (powerfully viscous) and the LaTour Blanche (more elegant, high toned). This was spellbinding in how layered it was sporting such an insane finish…lemon ricotta cookies and pineapple. Kiss of acidity to liven it up. Wish I could have opened this solo! — 3 years ago

Oxidative style Champagne with loads of brioche, toasted almonds, high acidity and minerality. — 2 years ago
Used for a cocktail champagne and lemon based, blends really nicely. — 5 years ago
I don’t remember buying this or if it was a gift. However, I have ignored it for sometime. Hazards of loving Champange...especially, Rosé.
This is not really our style as it falls into more oxidation than we like. But, still enjoyable.
The nose reveals, bruised green-golden apple & Bosc pear, some apple cider, sour pineapple, lemon chiffon, white citrus blend, bread dough, baguette crust, nougat, sea spray, crumbled chalkiness, grey volcanic minerals, withering, yellow lilies and spring flowers.
The body & mouthfeel are nice. Bruised green-golden apple & Bosc pear, some apple cider, sour pineapple, lemon chiffon & poppy cake, cream, butter notes, white citrus blend, bread dough, warm toast, nougat with nuts, brown sugar spice w/ a little palate heat, vanillin notes, touch of butterscotch & caramel, sea spray, crumbled chalkiness, grey volcanic minerals, withering, yellow lilies and spring flowers. The acidity is good just not as lively as I like. The finish is rich, polished, well balanced and quite nice, just not outstanding.
Photos of; Domaine Simonnet-Febvre, street sign, stainless steel tank room and Burgundian vineyard.
Producer notes; In 1840, Jean Febvre, a barrel cooper from Montbard, founded the winery that is now Maison Simonnet-Febvre. It was exclusively specialized in the making of sparkling wines using the so-called “Traditional Method”.
Maison Simonnet-Febvre owns vineyards in Chablis, Chablis Premier Cru “Mont de Milieu” and Chablis Grand Cru “Les Preuses”. It produces and vinifies a large range of different wines from the diverse “terroirs” of the Chablis region.
Maison Simonnet-Febvre was purchased by Maison Louis Latour in 2003. — 7 years ago
Not a bad follow up to champagne. Flat out good. Judy should have more birthdays. — 11 years ago
15 person champagne tasting with friends.
We finished the tasting with what I would call the King of Champagne, Kurg. For me their are two Kings in wine. The other would be Chateau Latour.
Had this three times last year, it was showing a lot of citrus. In our tasting, it showed more integration & complexity. Much better and will continue to better things for a decade…maybe more. — 3 years ago

Wonderful wine, tasting of apricots. Slightly powerful but very drinkable and smells like champagne. Very well balanced. — 9 years ago
At Les Caves Legrand, 1 rue de la Banque, Paris. A very good discovery. Richness and opulence of the 2009 vintage well tamed by the energy of the 2010 vintage. Aplomb, depth and precision, wood is well integrated. A hint of nuttiness mid palate. Refreshing and honeyed. Half way through Selosse and Cedric Bouchard. — 11 years ago
