Premier cru Blanc de Noirs. Bright coppery gold with white mousse. White cherry and red apple on the inviting nose. Echoed on the medium palate adding toasted brioche and baked pear. Firm acidity (of course) and a lingering charred apple finish. Wonderful Blanc de Noirs! Classic with white meat stews, firm white fish, and other white wine fare. A cuvée Brut Premier Cru N/V Champagne dominant on Pinot Noir 40% and followed by 32% Chardonnay and 28% Meunier, sourced from their most distinctive villages in Reims. However; most of them are Ludes, Chigny-les-Roses and Rilly-la-Montagne), this house champagne is the purest reflection of Cattier’s particular winemaking style as 41% of their bubbles comes from their reserve wines and they always surpass the minimum standard of aging of 3 years in the cellar.
The olfactory is stimulated with the intense fruit-forward and elegance (coming Pinot Noir) kicks your senses beautifully, all driven by acacia and array of white flowers, ripen plum, and subtle biscuits. Entrance on the palate is as intense as the aromas with a mouth-coating brioche and beeswax with a balanced acidity (dosage 6g/L) and lime peel with a long and subtle nutty finish.
