However; most of them are Ludes, Chigny-les-Roses and Rilly-la-Montagne), this house champagne is the purest reflection of Cattier’s particular winemaking style as 41% of their bubbles comes from their reserve wines and they always surpass the minimum standard of aging of 3 years in the cellar.
The olfactory is stimulated with the intense fruit-forward and elegance (coming Pinot Noir) kicks your senses beautifully, all driven by acacia and array of white flowers, ripen plum, and subtle biscuits. Entrance on the palate is as intense as the aromas with a mouth-coating brioche and beeswax with a balanced acidity (dosage 6g/L) and lime peel with a long and subtle nutty finish.
