Time for my #FridayCabernetfix. Here is a delicious one.

Deep inky in color with a short purple rim.

Fruity nose of black currants, plums, cooked cherries, cedar, vanilla, light vegetables, herbs, tobacco leaf, spices, graphite, peppercorn, pencil lead, dark coffee and earth.

Full bodied and bold with medium acidity and long legs.

Dry on the palate with blackberries, black currants, plums, cooked cherries, cedar, vanilla, licorice, cloves, herbs, spices, dark chocolates, coffee, peppercorn, light vegetables and pencil lead.

Long finish with round tannins and tangy raspberries.

This is a delicious Napa Cabernet. Showing great complexity and mouthfeel. Big and bold, rich and opulent.

Balanced and enjoyable by itself or with food. A great wine from a great vintage, with great potential.

Good right out of the bottle and better as it opens up (2 hours).

Drinking very nicely now and will be even better in the next 5 years.

I paired it with a charcuterie board of meats, cheeses and light appetizers.

A blend of 88% Cabernet Sauvignon, 5% Merlot, 4% Cabernet Franc and 3% Malbec. Aged in (81% new) French oak barrels.

14.5% alcohol by volume.

Grabbed another bottle. Named for mountain range dividing Napa and Sonoma, old stone winery dug into side of dormant volcano crater in 1889, remained in production ever since. Pale lemon with aromas of Tropical and stone fruit with complex spice and blossom notes. On the palate apple, pear and citrus zest flavors with light oak and honey tones, fresh and vibrant, well integrated. Long finish ending with flinty mineral characteristics. Long aging potential. That’s how I like my Napa cabs. Sturdy but not face-blasting. Good lift, fresh, bright, fine dusty tannins. Fruit has some idiosyncratic, site-specific flair. Very tasty. — 2 days ago

A producer bottling I’ve not had. This came to be in my procession via a wine exchange with @Severn Goodwin.

This 03 Jade is In fine shape due to its quality production and Severn’s excellent storage of it.

Nose reveals ripe, slightly stewed & baked; dark cherries, blackberries, mixture fresh of our fruits as well as blue fruits with hints of faint poached strawberries. Sweet tarriness, black licorice, black pepper, dark steeped fruit tea, expresso roast, bay leaf, dry crushed rocks, barrel shavings, dark, rich earthiness with dry leaves, mid dark spice, limestone minerals, dry top soil, underbrush with fresh & withering; dark, red, purple, blue florals framed in heavy lavender and soft violets.

The palate is, ripe, rich, elegant, round and lush. After roughly 15 years in bottle, she shows, rounded, dusty, chewy/meaty, dry tannins. The structure, tension, balance & length are just the other side of its peak. The fruits like the nose are slightly stewed & baked; dark cherries, blackberries, mixture fresh of our fruits as well as blue fruits with hints of faint poached strawberries. Sweet tarriness, anise to black licorice, cinnamon, vanilla, black pepper, smoked meats, dark steeped fruit tea, expresso roast, bay leaf, dry crushed rocks, old tobacco, barrel shavings, dark, rich earthiness with dry leaves, mid dark spice, limestone minerals, dry top soil, very dry underbrush, some tree bark/sap with brilliant, fresh & withering; dark, red, purple, blue florals framed in heavy lavender and soft violets. The acidity is really nice...like a cool mountain stream. The long finish is delicious and persist endlessly into dry, dark spice on the long set.

Still has another 3-5 years of good drinking ahead of it depending on your storage and the age you like your wine to show.

Producer notes, San Francisco Lawyer Jim Paras started the winery in 1984. At the time, he produced about 8,000 cases a year of Syrah, Merlot, Mourvhdre and Viognier. In 1994, Chalone began distributing his wines and eventually bought the winery in 2000.

Mayacamas Vineyards

Mt. Veeder Cabernet Sauvignon 2001

Finally, the 2001 Mayacamas is open for business. Previous bottles have been green and reticent, so much so that I wondered whether or not these would ever come around. Thankfully, my patience was rewarded. Brought to Tasting Group. Opened in the morning and allowed to slow-ox for six hours before entering the decanter an hour prior. Served double-blind. Poured a lighter garnet with no signs of color variation towards the rim. On the nose, red fruit dominant with dry leaf tobacco, some green bell pepper and baking spices. There was an overall impression of freshness that was hugely compelling. On the palate, again, hit with crunchy red currants over some darker fruits with a little bit of tobacco, leather and dark cocoa and espresso. Long, tongue smacking finish. A show-stopper of a wine, really. This had everyone’s attention at the table. It was universally thought to be Old-World and probably Cabernet Sauvignon based. Everyone thought it was much younger and who would deny such an assertion as it came across so youthful! Loads of smile when this was revealed to be the wine. I wish this wasn’t my last bottle as this would be fun to follow over the next few decades. Unanimously the groups WOTN. — 12 days ago

No. 77 Napa Valley Reserve Mt. Veeder Cabernet Sauvignon 2011

This nine year old Cabernet Sauvignon from Napa Valley is drinking very nicely now.

Nicely balanced, soft and tangy, with a nice mouthfeel and nice complexity. Shows a great nose once it opens up.

Full-bodied with medium acidity and great legs. Dry on the palate and spicy.

Showing black fruits, earth, wood, vanilla, licorice, leather, light vegetables, herbs, tobacco leaf and black tea.

Long finish with round tannins and tangy raspberries.

I've had this vintage a few months ago, and this time I gave it 4 hours to open up. That's when the tannins and structure came in. I should have been more patient last time. Much better now. Tasty and delicious.
