2022/5/28-29 with jingiskan lamb barbecue, etc. The nose starts off quietly, with hints of dark berry and green bramble; with time, things become slightly more pronounced, and a faint smoky note appears. The palate is very nicely balanced, with subtle fruit and moreish acidity. Vanilla and almond on the aroma. Creamy body upfront that quickly turns into a high drying acid that reminds me of grapefruit zest. Lemongrass on the mid palate and as it gets closer to room temp, the nuttiness turns into pistachio. Definitely the best Sake I’ve had in a long time. — 17 days ago
