Figured this would be a nice aperitif before Thanksgiving dinner and boy was I right. This was downright gluggable. White peach and lemon curd with a bit of brioche and a nice vein of minerals giving this all the life and lift a Champagne nerd can appreciate. I really dig this.

#Pairing Cooking a surprise dinner for my mom. I decided to make her favorite. Salmon with asparagus on a bed of cauliflower risotto to keep it healthy. Initially started having this with raspberries. I would highly recommend a pan seared crispy skin side salmon with this. Or just same great aged cheeses (appetizer) 🥂
