Structured With clean dark fruit profiles out of the bottle and the Jayer breeding is there for sure. Evolved to add weight and left with some coffee grounds and peppercorn mouth feel. At Mosu where it did not pair well with the heavily influenced Japanese Kaiseki-ish food.

Magnum of Jayer-Gilles showing beautifully. Continued to open up over the course of the evening. Incredibly balanced and deep. Going on 27 years young, it's right in the window. Practicing our Rudi skills - two shakes of the pen transformed this from 1988 to 1888!

It’s good & very classic style, but doesn’t has the depth as DRC. But personally I like it better than Henri Jayer 1990 Echezeaux .
