The 2018 Cabernet Sauvignon Antiguas Reservas from Maipo is a rich garnet in hue. The nose offers notes of blackcurrant and mint underlined by subtle cherry aromas and hints of spice. In the mouth it’s delicate and energetic with refined tannins and characterful grip while the rich flavors are shored up by the freshness. (Joaquín Hidalgo, Vinous, June 2022)

The green pyrazine character has really faded and integrated with time - it’s still there, especially on the nose, but in a nice way and the candied red fruit has emerged. Tannins fully resolved and showing great with a pan seared filet mignon; it finishes long, full and balanced. Glad I waited might have hit the peak!

"Odedi"

It's time for Cabernet for my #FridayCabernetfix. Here is a nicely aged one from Chile.

Dark ruby in color with a wide brick rim.

On the nose, blueberries, black cherries, black plums, oak, vanilla, licorice, spices, chocolates, dark coffee and black pepper.

Full-bodied, smooth and elegant, with medium acidity and long legs.

Dry on the palate with black currants, sweet cherries, raisins, vanilla, oak, licorice, spices, chocolates, tobacco, mocha, leather, light bitter herbs, light earth, vinaigrette and peppercorn.

Long finish with smooth and elegant tannins and tangy cherries.

What a nice surprise. This is a delicious Cabernet Sauvignon from Chile. Nicely aged with nice balance and complexity.

Good right out of the bottle and better after 45 minutes of airtime in a decanter.

This 12 year old Cabernet Sauvignon from Chile is drinking extremely nicely now. Peaking now, with great complexity and a soft mouthfeel. Very tasty all by itself.

This is a great example of an under $20 wine that becomes delicious with proper aging.

I paired it with a charcuterie board of meats and cheeses.

100% Cabernet Sauvignon grapes were aged in French oak barrels for 12 months.

14% alcohol by volume.

Old cellar smells.
Barn floor, tabac, dark fruit leather. The wine is lighter in body than you would think, which sighs heavily as the oak comes over to pick it back up and lifts it into the medium bodied range. Could use a little more time to allow for full oak/win/acidity balance, and that’s on me.
Haven’t had a CM wine since I was at the winery.

Nose of blueberries, cherries, blackberries, vanilla, wood, spices, peppercorn, chocolates, tobacco, graphite, dark coffee, vegetables, earth and leather.

Full bodied and smooth with medium acidity and nice legs.

Dry on the palate with blackberries, black currants, plums, oak, cloves, vanilla, spices, espresso, dark chocolates, peppercorn and bell pepper.

Medium finish with firm tannins (after 90 minutes) and cherries.

This is an above-average Cabernet Sauvignon from Valle Del Maipo in Chile. Balanced with mild complexity and earth notes.

Beginning its drinking age now. Enjoyable by itself or with food.
Needs time to open up properly and show complexity and tannins.

I paired it with Chilean BBQ steak and grilled veggies.

100% Cabernet Sauvignon grapes aged for 12 months in French oak barrels.

Tried another bottle. In 2006, Cousiño-Macul celebrated its 150th anniversary, established in Santiago in 1856. Recently the Cousiños moved to a new estate at Buin. Dark Ruby with aromas of sweet fruit with a floral spice nose. The palate shows currents and cherries with smooth tannins on a lingering finish. Drink now. Much better than previously bottle.

So, this was a baller. This wine started out amazing...ripe fruit, vegetal and some of the developmental notes, but started out tasting like 10 year old Bordeaux. Unfortunately, it the glass it fell apart quick. So, we went with short pours after that...
