It's time for Cabernet for my #FridayCabernetfix. Here is a nicely aged one from Chile.
Dark ruby in color with a wide brick rim.
On the nose, blueberries, black cherries, black plums, oak, vanilla, licorice, spices, chocolates, dark coffee and black pepper.
Full-bodied, smooth and elegant, with medium acidity and long legs.
Dry on the palate with black currants, sweet cherries, raisins, vanilla, oak, licorice, spices, chocolates, tobacco, mocha, leather, light bitter herbs, light earth, vinaigrette and peppercorn.
Long finish with smooth and elegant tannins and tangy cherries.
What a nice surprise. This is a delicious Cabernet Sauvignon from Chile. Nicely aged with nice balance and complexity.
Good right out of the bottle and better after 45 minutes of airtime in a decanter.
This 12 year old Cabernet Sauvignon from Chile is drinking extremely nicely now. Peaking now, with great complexity and a soft mouthfeel. Very tasty all by itself.

This is a great example of an under $20 wine that becomes delicious with proper aging.
I paired it with a charcuterie board of meats and cheeses.
100% Cabernet Sauvignon grapes were aged in French oak barrels for 12 months.

Tengo un amigo chileno (vivió con su familia muchos años en Lima), siempre me trae un vino y rebusca mi bar por un Pisco para llevarse, esta vez trajo este rosé con algo de dulzor, muy bueno para acompañar quesos o con un tartare de atún queda perfecto. Vista: rosado pálido Nariz: aromas frescos, fresas, mandarina, notas de damasco y jazmín. Boca ligero dulzor, se confirma los aromas de boca, persistencia media-alta. This is a blend of 85% Cabernet & 15% Syrah and grown at an elevation of 2100 feet with an average vine age of 25 years. 50-50% fermentation in oak and stainless steel. At a retail price point of $20, it’s quite good. The tannins are soft and round. It shows a lot of brighter red fruits of dark cherries, strawberries and some blackberries, touch of pepper, crushed rocks and dry top soil, dark red fresh florals, good acidity and nice finish. Producer history and notes...In the early 1990’s, Bruno Prats (Chateau Cos The) and Paul Pontallier (Chateau Margaux) discovered the high caliber of Cabernet Sauvignon being made from Chile’s Alto Maipo region. They partnered Felipe de Solminihac, a renowned Chilean agronomist, oenologist and winemaker in the region. They purchased 45 acres in the 'Quebrada de Macul', considered the heart of the Maipo Valley vineyards and Viña Aquitania was born. In January 2003, Ghislain de Montgolfier (CEO of Bollinger Champagne), became the fourth partner. Good list of French pedigree involved in Aquitania. — 2 years ago
