It’s silky-smooth with a fine bead of bubbles, as tension quickly mounts through a wave of saline-tinged acids and minerals that cut through with laser-like intensity. A salty flourish defines the finale, while the palate is left watering for more. This is intense on its own, but it would be dreamy with any number of rich, fatty or fried foods. The N.S. Ripe strawberry, fine mousse, piercing but not overwhelming acidity and an almost unctuous and tarry finish with a tannic note that reminds me that this is 50% Nebbiolo (50% Pinot). Great stuff but unique. Been on the lees for 7-8yr (2007 base supposedly) but only slight biscuity notes present.
