Dassai 23 Junmai Daiginjo Sake

It’s a classic. I thought it got better as it chilled off. It was a bit syrupy and sweet at first. Cooled off it was delightful for me. Interesting as the other bottle was the opposite. — 14 days ago

3 Grain Junmai Ginjo

This was all part of our Sake Day 2025 experience. We only tasted 60ish sakes out of an estimated 450, so a small fraction of what was available. While I attempted to rinse the glass with water and stay hydrated it’s difficult to fairly rate in this environment and I use it solely as a time to try a wide variety and interact with the brands. Sweet. — 9 months ago

Dassai Beyond Junmai Daiginjo Sake

Dassai Beyond - It’s beyond good. This is the level above 23. Brought over from Japan by a friend a colleague and it’s the reason I skipped a number of the wines opened. 10/2023 16% alcohol, think it’s polished to 20% but that’s a guess. — 2 years ago

Great sake, clean and clear. Medium body, a bit viscous. Melon, plum, and anise with sweetness, but followed by a dry, bitter shochu-like finish. — 10 months ago

Dassai Blue Junmai Daiginjo Yamada Nishiki Type 50

Sake World 2024 Had to judge given it’s the same glass throughout the tasting but these were nice. Actually had the 35 which was fun to try. I would probably lean towards the Japan based ones unless this is substantially cheaper and I could try head to head. Blue is made in NYC. — 2 years ago

TOYO BIJIN Hakutzuru-nishiki Junmai Ginjo

Okarakuchi. Floral, fruity on the first palate finished with sharp clean finish. Not my favorite but it does its job. Sometimes Karakuchi sake leaves large amount of umami flavor in the end but this sake leaves more clean finish. — 6 years ago
