A great wine!! acidity is finely tuned to suit the wine. not too complex just right — 4 years ago
Entry-level cuvée by one of the great artisans of natural wine in Beaujolais. Not as complex and long on the palate as his two admirables Brouilly, or Eau-Vive; but for its price ... It is a beautiful gourmet bottle with this explosive fresh floral bouquet on the nose (Lily, Rose, Iris, Peony). The mouth is sparkling, bringing a very greedy crunchy fruitiness. To drink in its youth. A lot of pleasure
— 6 years ago
Love it. Still a little co2 on day 2. A little funky and super light. 90 gamay from Loire 10 poulsard. Beguet is becoming a new fav producer. Chambers wins again. Reminds me of ganevats many Vdfs but less than half the price. — 8 years ago
One of the best sparkling rosé wines I’ve had. Not too sweet, not too dry. — 8 years ago
Louis Bouillot – Blanc de Noirs – Brut
Crémant de Bourgogne AOP – Burgundy – France 🇫🇷
Overview
A Blanc de Noirs crafted primarily from Pinot Noir (and sometimes Gamay), showcasing a more structured and savory expression of Crémant de Bourgogne. Traditional method production delivers finesse, while this cuvée leans into tension and complexity over simple fruitiness.
Aromas & Flavors
Subtle red berry notes, wild strawberry and raspberry, intertwine with brioche, toasted almond, and a lightly savory, almost mineral-driven undertone. Less about fruit, more about nuance and depth.
Mouthfeel
Fine mousse with vibrant acidity. The palate shows noticeable tension, especially on the back end, where it lingers longer than expected. Slightly firmer structure gives it a more gastronomic feel.
Food Pairings
Perfect with charcuterie, mushroom dishes, roasted poultry, or aged cheeses. Also shines with savory appetizers where the wine’s tension can elevate the pairing.
Verdict
A more savory and structured Crémant that stands apart from lighter, fruit-forward styles. Complex, balanced, and quietly delicious, this is Crémant with intent.
Did You Know?
Blanc de Noirs means “white from black,” referring to sparkling wines made from red grapes like Pinot Noir, where careful pressing avoids color extraction while preserving structure and depth.
🍷 Personal Pick
A go-to when I want bubbles with a bit more edge, less playful, more thoughtful, and seriously satisfying. — 2 months ago
White cherry floral dried rose. Classic burgundy — 2 years ago
One of my favorites. Too sweet for my husband. Great “patio wine” — has some bubbles, serve chilled, very easy to drink. Love love love — 5 years ago
I think my first ever pet nat a few years ago (poured by @Alex Spoto maybe?), and still among my all-time favorites. Wonderful juicy and sweet peach and strawberry fruit while also being incredibly savory and mineral. A touch off-dry? Enjoyed tonight with quick-smoked herb-rubbed salmon, Israeli cous-cous and a fresh salad. Perfect. — 6 years ago
Yum. Jolly rancher, rocks, acid party. Delish. Gamay, not white. — 7 years ago
Rose, cranberry, lavender, redcurrant, plum on the nose with a beautiful hint of effervescence on the palate and similar delicate red flavors, finishing with textural complexity and bright acid. Lovely with a slight chill and beautiful pairing with calf liver and duck frites. Here we come summer friendly reds! — 8 years ago
Fantastic cremant. Blend of Chardonnay, Pinot Noir, Trousseau and Poulsard. First fermentation with indigenous yeasts, second fermentation with an addition of grape juice (No added sugar). Lively, complex, citrus aromas and flavors. Mineral, saline. Great acidity — 3 years ago
