100 % Yamada Nishiki rice.
White peach, spring flowers and ume (green plums) on the nose.
Sweet honey dew melon, orange blossom, kumquat, lychee and a creaminess that lasts forever.
There is an elegance to this Nihon shu.
We had fresh caught local Spot Prawns sashimi and local diver caught octopus grilled.

Nose floral, nectar, sweet face powder/cosmetics, watermelon, raspberry.

Dry, crisp, medium-bodied. Pear, melon rind, a little leesy-like roundness. Definitely needs a warm up (not heated, just not cold) as tasting straight from the fridge makes it seem disjointed and hot. Ginnosei and Miyama Nishiki rice varieties. — 4 years ago
