My first time here in Chablis! I chose to have with dinner (Wine Not, a fantastic wine bar & restaurant in Chablis) a bottle from a winemaker who doesn’t need a great deal of introduction nowadays. Samuel Billaud has fast become one of the region’s most exciting winemakers, so I was eager to try something of his. This was on the list for the veritable bargain of €65. Mont de Milieu is a premier cru from the right bank of the Sereine, a vineyard which shares a very similar aspect, and soils, to Les Clos. The 2020 here is a wine of immense presence, structure, classicism, with a slight hedonistic character. The flavours lean toward the fuller side of the spectrum, with flavours of marzipan, orange peel and fresh cut marmalade, with a hint of honey. But there is terrific zip on entry, incredible minerality; any weight to this wine is lean, muscular and structured, possessing deft acidity, a lovely herbaceous quality (think tomato vine) and a finish to die for. I can’t hardly believe my luck - found this at a local grill house bar restaurant in MD for $85 on their cellar clearance wine menu. Truthfully I hadn’t had this nice of a #napacabernet in quite some time. Bold fruit on the nose but some nice earth, acidity and elegance on the finish with fine tannins. Unmistakably Napa and delicious. Beautiful pairing for upscale meatloaf. — 7 years ago
I only have have a 1/2 dozen bottles of vintages that predate the 2012 vintage when Caymus still made wines in a style I appreciated. More; tannic, spice, earth and complexity.
Now, they are amongst the last to pick fruit, which translates into higher brix levels and much sweeter wines. They pick just as the grapes start to show the slightest raisin shrivel.
I thought I might be early on the 2007. Instead, it’s right around its peak form.
The nose reveals dark black currants. Ripe; blackberries, black plum, black raspberries, stewed plum, dark cherries, stewed strawberries and creamy raspberries. Dark spice, black tea, mixed dark berry cola, limestone minerals, rich dark soil, some dry crushed rocks, vanilla, cinnamon, sweet tarry notes, just a touch of eucalyptus with blue, purple and dark red fresh & withering flowers.
The body is full. Tannins round, grainy, tarry, sticky and meaty...60% resolved. Still lots of life in this 07....another 7-10 years of good drinking left. The wine is delicious. The structure, tension, length and balance are in a great spot. Ripe; dark black currants, blackberries, black plum, black raspberries, boysenberries, stewed plum, dark cherries, stewed strawberries and creamy raspberries. Dark spice with some palate heat, soft, understated and well integrated baking spices; light vanilla, clove and cinnamon. Black tea, mixed dark berry cola, black licorice, limestone minerals, rich dark soil, some dry crushed rocks, vanilla, cinnamon, sweet tarry notes, just a touch of eucalyptus with blue, purple and dark red fresh & withering flowers. The acidity is round and perfect. The flavors glorious. The long finish is extremely well balanced, seamless, it glides over the palate effortlessly and last minutes.

Crafted by Joseph J. Wagner, 4th generation winemaker, with winemaking roots in the Napa Valley since 1906. Deep Ruby with red berry fruit aromas, tea and sweet spice notes. On the palate flavors of jammy blackberry and cherry with pronounced sweet vanilla oak, cacao and pepper spice notes. On the nose, lush, ripe, ruby, blue floral fruits of; blueberries, black raspberries, dark cherries, black plum with some hints of strawberries & cherries. Vanilla,spice, cinnamon, touch of clove, rich, dark, moist soil, black licorice , black raspberry cola, stones, wood notes with dark lavender and violets.
The body is medium with heavy, dark, tarry, sticky tannins. The fruits gorgeous, leaner and very ripe. Notes of vanilla follow. Raspberry cola, blueberries, black raspberries, dark cherries, black plum with some hints of strawberries & cherries. Nice soft spice, cinnamon, touch of clove, rich, dark, moist soil, black licorice , black raspberry cola, leathery, underbrush, dry stones, crushed rocks, wood notes with dark lavender and violets. The acidity is nicely done and the finish is ripe, elegant and well balanced.

I have to admit - I had to look up where Salina, Italy was after ordering this by-the-glass white labeled "must try" on the wine list at a high-end restaurant/bar down the street from me. Turns out Salina is one of the Aeolian islands growing the delicious Sicilian dessert wine Malvasia delle Lipari. This wine comes from those same Malvasia grapes, but is fermented dry. Aromatic and highly expressive - it smells of jasmine, ripe pear, white peach, chaparral, and mint. It's juicy and appetizing and a total treat to taste this corner of the wine world. — 8 years ago

You're not 40 every day and I wanted a special wine to celebrate that special day. Fortunately the wine bar / open kitchen restaurant we went to had that special wine, amongst 400 references, that I had been desperate to taste for a long while. I didn't take notes so it's all from memory, but the nose is what I liked the most. Coconut notes, leather, cherries, coffee... I spent probably 15 minutes in total smelling that wine. The palate was great with some acid drive, some matter but not in an overwhelming way, some gentle, well integrated tannins in the rear, before a long finish with savoury notes, red fruits, coconut and that gentle grainy tannic layer. A great experience to top up a day to remember.

Quick funny story:
Christine & I are LUCKY to have Kelly work in our office but we are BLESSED to be able to consider her and Darryl as dear friends.
We recommended to Kelly, prior to her going on vacation in Charleston SC, that they should stop by the Belmont hotel. They have a bar and restaurant that is 2nd to none in that area. Christine & I LOVE it!!!! Kelly sent me a quick text to say “hey, we’re at the Belmont! And about to have dinner!”
Being the goof ball that I am..... .....I called the Somm and said “I don’t care what they ordered, bring them a Shafer Hillside Select with some age on it!!!”. 10 minutes later he was decanting a 2003 Hillside Select table side! I love that hotel! Incredible service, incredible food and always a phenomenal experience! The only thing better are-our friends that are there right now!!!!
I didn’t Have a drop of this wine but I am scoring it a 10 based on experience alone!! It must have been “Badass in a Glass” as I always say!
