"Le Pavillon" Ermitage Syrah 2011

M. Chapoutier “Le Pavillon” Ermitage Rouge 2011, Rhône Valley, France 🇫🇷

Overview
A legendary single-parcel Hermitage Syrah from the Le Pavillon vineyard, planted on granite soils with vines averaging more than 65 years old. Production is extremely limited, with only a few thousand bottles produced.

Aromas & Flavors
Blackberry, raspberry, smoke, licorice, and dark chocolate with subtle notes of spice and tobacco.

Mouthfeel
Deep, powerful, and velvety with extraordinary structure and aging potential.

Food Pairings
Game meats, lamb, venison, or slow-braised beef.

Verdict
One of the most iconic Syrah expressions of Hermitage, combining power, precision, and immense aging potential.

🍷 Personal Pick
An incredibly subtle yet deeply structured Syrah that reminded me why tasting great wines is such a joyful experience. Sophisticated, intense, and beautifully balanced without ever becoming overwhelming. The aging potential is extraordinary.

Château Le Tertre Rôteboeuf

Saint-Émilion Red Bordeaux Blend 2006

9.5

My contributions for a fun right bank Bordeaux dinner. This ended up being a standout amongst the group but others included ‘95 Cheval Blanc, ‘05 L’Evangile and ‘89 Figeac (the starter whites may have stole the show…mag of ‘10 Chave Hermitage Blanc, ‘08 Dom, ‘21 Magi’s CdP Blanc…this ‘04 ZH I brought was an excellent bridge to dessert…good r/s but not cloying; incredible vineyard).

I’ve only had TR once before but it was infanticide many years ago. At roughly 20yrs, I was excited to catch this on what I expected to be near peak. Very tight upon opening but after 45mins in the bottle, this really strut its stuff. Red and purple floral aromatics, bay leaf, and leather. Beautifully elegant on the palate but everything is in its place…supremely balanced. Clean (no brett), multi-layered fruit spectrum (red, purple, blackberries), sweet tobacco, espresso, little cassis. No roasted or over ripe profile, and also not a lean/green machine. Balance balance balance. Lovely. Wish I had another.

Like the great Penfolds wines, I feel like these need a long time to really show their capability.

Delamotte

Le Mesnil-Sur-Oger Brut Blanc de Blancs Champagne

9.2

Had the 15 Salon two-weeks ago. After, I had this cuvée and their 2018 Delamotte. Not really a fair order. So tonight, thought I’d give it one. Been awhile since I enjoyed this cuvée.

In the rare case, Salon does not declare a vintage, this is where that fruit goes. So…when & if, buy this n/v.

Nice mousse, crispy, racy acidity. Lime pulp with zest, lemon pulp, green/golden apple, white stone fruit, some yellow peach, kiwi, tropicals, frothy, steamed whole milk, caramel, vanillin to vanillin, excellent white spice, palate penetrating volcanic minerals, limestone marl, brilliant chalky powder with bits, some yeastiness, baguette crust, brioche, toffee & butterscotch notes, almost a sweetish herbaceous quality, daffodils, white flowers set in greens with a nicely rounded, knitted, balanced, spot on tension and a 90 second, elegant finish that long sets on spice & volcanic.

Very fresh, clean, the softest mousse on the planet. Beautiful citrus, most delicate of minerals, gentle spice, grand acidity, focused precision and balance for days. Excellent. Just overly expensive. — 15 days ago

Fattoria Le Pupille (Elisabetta Geppetti)

Saffredi Maremma Toscana Super Tuscan Blend 2022

2022 vintage. Both chunky and refined. Medium-heavy body. Pricey for what it is tho. Twere it half the price that's being asked? Aha! Then you're onto something. 3.5.26. — 10 days ago

Krug

Clos du Mesnil Brut Blanc de Blancs Champagne Chardonnay 2004

Medium lemon straw , slight deeper than the P2 1998 served alongside . More persistent perlage than the P2, very fine . Here the nose is slightly deeper and more penetrating, with rich spiced citrus , buttered brioche , crushed chalk , seashell hints . This is powerful and dense on the palate , lemon , mineral , and chalky hints , fresh and vital, white flowers , even a touch of Indian spice. Long and balanced , still pretty youthful and probably needs more time to fully integrate the shear extract this has on the palate. Perfectly formed , with a fantastic future , better in 5 -8 years and will last a further decade. The complete package, spellbinding. — 3 days ago

@Jan A, just a question — when you talk about it being better in a Day 3, are you using anything to preserve it (Coravin, etc.?), or just “cork back in the bottle and leave it on the counter”, or ??? Just curious, asking only from a personal calibration standpoint!! Thanks in advance!! 🍷🍷

Hi Doug, I drank a couple of glasses on day one, put the corck back on and put it in the fridge at 4 degrees celcius. Had a dinner party at friends on day two (didn't drink any of this wine) and came back to it on day three. Still standing fierce. Just a softer, opened up version of the youngish wine on day one. Very well made and a very good qpr.

Thanks for the feedback @Jan A -a your method is what I used to do, we rarely have much left over, so I usually don’t worry as much about oxidation in the leftover bottle!! 🤔🤷😂🍷
