We visited there in the early summer of 2015 and now we got to try the fruits of their labor in the vineyard we witnessed at that time. A bio-dynamic vineyard with horse and plow 😁. Their wines are fantastic. This wine was richer in fruit and more expressive than perhaps characteristic for the Pauillac region. But the layers of earth infused flavors and the most subtle hint of ‘barnyard’ made it a sensation. Love FBalthazar’s Chaillot Cornas but never had his SS offering. I’d rather catch most SS wines in their youth to not roll the dice and get them super fresh.

Splash decanted; followed over two days.

Deep purple in the glass with hallmark Cornas aromatics…smoked meat, charcoal, dark potpourri/florals, cassis, blackberries. On the palate, the typical Cornas rusticity is more elegant, with peppered black fruits, sweet smoke, mocha, savory spices. It undoubtedly has a very “pure” profile, showing Syrah without any sort of mask. Good acid and tannin. Day two showed the mid-palate lose steam a bit, which isn’t a big surprise. Lovely bottle. If I could guarantee its evolution, this seemed like it would cruise another 7-10yrs, but who knows with SS! — 6 months ago

First wintery Sunday with depressing cold drizzle. My response: home cooked Pasta Fagiole with soft Japanese yeast bread with lots of butter. What a wonderful comfort food match. The Etna Nero d’avola is young, juicy, and fruit-forward. Cassis, Boysenberry, and bright citrus notes. Medium weight, nice viscosity, and enough acidity to stand up to the tomato’s and good olive oil drizzle. Touch of green stems actually balances the fruit. Nice long finish and makes me consider picking up a few more for rustic pizza/pasta. — 6 years ago
