Pale light gold in colour. Aromas of Flor yeast, nutty, oxidative. Aspects of over ripe mouldy apple. Refreshing and salty, finishing bone dry. Trying to understand Manzanilla and Sherry in general. This is a fino Sherry made from the Palomino grape. The more I sipped this the more I liked it. 15%ABV. Correct me if I’m wrong but I think Manzanilla is best drunk when young and fresh. Da bomb, for sherry lovers: Palo Cortado versión. A shape shifter on the palate & ringing on the higher registers, this Hidalgo checks all the boxes for me, which includes a lightness & freshness heaven made for most food. Burnt pine cone & toffee bits, a subtle mushroom thing (oyster?), & a rather trim beef bouillon broth lurking on the back end. That may all be bs but it’s a wine that inspires….. — 2 years ago
