Liberty Ciderworks, Spokane WA. 55 Chain English Style Cider. Label claims it to be “dry, tannic and fruit-forward” with Dabinett, Chisel Jersey, and Brown’s cider-specific varietals. Golden brown, excellent clarity, light carbonation, not much head on initial pour. Some oak barreling. Lightly malic with restrained aromatics. This is about as good as it gets for a Rose. It’s not the cheapest, but I’ve drank a few of these already and it’s hard to keep it in the bottle. Amazingly good on a warm day. So refreshing. Golden brown, light carbonation with pinpoint bubbles. Moderate body. Tannic mouthfeel, characteristic of the variety; not barrel aged. Dryish and fruity, interesting flavor profile on finish. A delight. Notes from the cider maker/pomologist online: 6.7% alc/vol. earthy notes balanced by bright fruit notes of green apple, quince, white raisin and mandarin peel, which scan as credible to me. Tasting ciders like this takes practice and a whole new vocabulary. The green apple note is mostly malic to me, but it’s more apt and accurate indeed. Tasting is believing folks. — 5 months ago
Golden brown, moderate plus carbonation. Spice and faint sulfur like aroma, reminiscent of acacia wood barreling. The label promises dry, fortuitously fruit-forward cider in the Basque style, which is on point. Lightly astringent, almost bitter but perfumed finish. Heirloom apples cofermented in a New England style with molasses, raisins and Juneberries (Servis) a traditional berry foraged in the PNW by indigenous people. Golden brown, excellent clarity, 9.2% alc/vol. off dry. Molasses note in nose, Raisin note in mouth, malic finish. Light yellow, light carbonation. Label promises “crisp pineapple, stone fruit and honey aromas and flavors”, which is largely accurate. Tilted Shed. Love’s Labor. Blackberries, elderberries, apples, wild ferment in Sonoma. One of the best ciders I’ve had from CA. I feel I can taste all the berries and apples used. So we’ll balanced with good tannin and acidity. — 5 years ago
