So...I had a birthday a couple weeks back and due to scheduling, my regular bottle finishing team wasn't available until now, so we're finally doing it up in my grand, unique style.

24-Hour Update:
Nose has cedar, over-ripe cherry, crushed red currant, crisp red pepper slice, old leather, blackberry jam, over-ripe cranberry, black pepper and dry garden soil.
Palate has strawberry jam, tart cherry, dried cherry, orange zest, blackberry fruit gummy, dried tangerine, volcanic rocks and warm molasses cookie.
In a fine spot, anyone holding this in proper storage could probably expect this to live to a 10th birthday. — 3 years ago
Not bad from cork pop, but definitely better after 90 min of air. Nose is youthful oak and slightly ripe blackberry, sandalwood. Palate all ripe blackberry and attenuated pepper spice with a hint of sandalwood. Some iodine when moving to the mid-palate. Initially I was getting a a fairly strange Oreo cookie kind of note. The finish is a little direct and still a bit on the youthful side but this is gaining. The best years of this are ahead of it for sure. Going to be a force in 2023 and plan to hold my 3L of this for much much longer. — 4 years ago

Lots of complexity and depth of flavor. Honey, white chocolate and caramel. Nectarine, pear and bloodorange. Almonds, oats and buttery cookie-dough.
Exquisite balance, luscious sweerness, fresh acidity and spicy bitterness.

Very nice German Pinot Noir or Blauburgunder.
Notes of rhubarb, strawberries, jam and leather. A bit of a bite at first but mellower with a little time opened and with food.
Crab cakes, shrimp, asparagus and risotto. Chocolate cookie with salt to finish.

Peach cobbler, caramel-apple, baked pear tartlet, pine nettle, sweet corn, dried red cherry, cedar-on-grill, brown sugar, nutmeg, cinnamon, chilies, generous oak that includes acorns, crisp vanilla cookie make the nose. Hot initially, with oregano oil, cinnamon and tobacco. Revisit yields subtleties, including lemon oil, grapefruit pith, orange peel, arabica, eucalyptus, apricot, red chilies, Mexican cigar spices, and peppercorn dust. Cinnamon-oak builds to a crescendo of resinous might in a cloud of foundry smoke. Allspice appears with oregano following hot on its trail.
