Medium garnet with a medium wide garnet rim . Quite thick tears . A little high toned with an earthy tobacco , old wood , sous bois , spiced cherry , ripe blackberry note . On the palate this is quite rounded and juicy with sweet tannins spiced red plum , dark cherry and cassis . Ok balanced acidity , slightly warming alcohol . Medium spiced red plum and cherry finish . With more time in the glass this starts to become a little disjointed, I would recommend drinking this at a more or less cellar temperature, which wasn’t the case here . Ready now , still on its plateau of maturity but best from now and over the next 5 or so years . — a month ago
Quite light straw colour . Quite aromátic , quince , honeydew melon , white flowers . On the palate this is quite focused with green fruits , apple , quince and some chalk dust . There is a touch of creaminess to the mid palate which helps to round out the wine with decent mineral , flinty tinged length . Quite clean and fresh , young but still enjoyable , but will probably imorove over the next 3-5 years and last well a further 5 or so . — 25 days ago
This shows some barnyard, horsey notes up front, likely Brett, but for more Brett-tolerant folks like me, it’s the lovely fresh redfruits underneath and crisp and lively acidity, together with the lingering finish, that make this a lovely CdP!! But I would note for those who are very Brett-intolerant, you may not care for it at all. — a month ago

Delicious with Burrata, Sliced Peaches, Greens drizzled in light Olive Oil & Tondo Balsamic Vinegar over Holy Moly Batard Crostini’s made from Companion Bake Shop.
I have come to fully embrace cuvées from Gimonnet & the quality & value they bring over higher priced champagnes.
Nice fuller body. Yellow stone fruit-peaches, nectarines, Bosc Pear, bruised green & red apple, tropical melons, overripe pineapple flesh with heavy juice, hints of ginger ale, graham cracker, baguette crust, understated yeasty notes, very soft white spice, chalky powder, sea spray, limestone powder w/ volcanic minerals, yellow flowers, jasmine, rainfall acidity with elegance & smartly polished finish that last just over a minute and lands on gentle minerality.
Resellers tab this Brut but it comes in a 4.5g, which makes it an Extra Brut.
