Sourced from over 70 tiny parcels of old-vine, head-pruned Tempranillo blended with a small percentage of Graciano, aged 15 months in French oak. Deep Ruby with aromas of dark berry fruits, sweet spice and herb notes. On the palate flavors of blackberry and ripe plum with notes of vanilla, spice, tobacco and floral herbs. Fine firm tannins, long finish ending with fruit, oak and earthy character. Very nice! — 2 years ago

Same comments as before. Tart black cherry, plum, pomegranate, mushrooms, little bit of dark fruit coming through. Bit of sour, a bit dank. Dense, drinking well on open. Well blended tannins and acidity. — 4 years ago

Hibiki Highball from the master at the Apollo. Been two years since I’ve been here but it felt like yesterday. Literally nothing has changed. Must stop if you are in Tokyo. Feel free to go to the bar Milo next door and have a drink of the “Mr Norm” bottle that I had to buy in order to get a drink. Keep in mind all of these places max out at 8 people. On the palate flavors of black cherry, currants and raspberry with notes of pepper, floral and mint. Long finish, nice balance with fine soft sweet chewy tannins ending with fruit and earthy notes.
