This is my second favorite food & wine pairing. The two together are a perfect 10. It is simply my favorite pork chop and there isn’t a close second.
This is the Mustard’s Restaurant in Napa recipe which, they have sold over a million.
There are a dozen different seasoning/spices to this two-day pork chop marinade that brings such depth of flavors & complexity to it. The spices penetrate deep onto the palate. The wine marries and complements all those seasonings & spices perfectly with just the right amount of restrained sweetness and texture.
The nose reveals; stone fruits, Meyer lemon, lemon meringue, lime candy, pineapple juice, green melon, applesauce, just a touch of petroleum, honey notes, waxy notes, touch of beeswax, light white spice, chalky saline notes, mixed greens, yellow lilies, jasmine and spring flowers.
The body is thick, rich, lush and waxy. Stone fruits, Meyer lemon, lemon meringue, lime candy, pineapple juice, green melon, applesauce, just a touch of petroleum, honey notes, waxy notes, touch of beeswax, light white spice, chalky saline notes, light, powdery minerals, mixed greens, yellow lilies, jasmine and spring flowers. The acidity is round and beautiful. The finish is; rich, lush, ripe, well balanced, delicious and persists nicely for minutes.

In the day these guys were Epic! I traded for this wine (Covid inspired) and on a particularly cold, blustery Chicago Saturday... we did big-ass burgers and left over Greek potatoes and green beans. Match made in Heaven! Haven’t seen a plastic cork in years... 16.1... Holy Shit! No sign of alcohol on the palate... did you get that? 16.1... no alcohol on the palate? My first bottle of eight. It’s early but with seven more bottles, I took advantage of my curiosity. A stunning vintage and perhaps their best Alter Ego. Beautiful nose of fresh floral mid and dark red fruits with excellent silky mouthfeel. Two hour decant. I would wait another five years to check on my next bottle. Hedy’s 4th and main course, Lamb - Rack, Shank, Lavender, Cumin, Coriander and a tiny bit of Mint w/ Honey, Butter Beans, Baby Vegetable. Excellent preparation. This really could be left bank Bordeaux, with a very pure expression of fruit, pencil shavings and dark chocolate. The wine is quite primary, primal even, with intense flavours of candied red fruits - certainly this is more red fruited than black - and a dark, bitter finish akin to coffee beans. The tannins are actually quite mellow, but acidity high, all of which contributes to a strangely Tuscan feel. Nonetheless, it’s a terrific wine that should age very well indeed. — 5 years ago
Dark ruby coloration. On the nose, cherry, coffee beans, earth and citrus peel. On the palate, cherry, strawberry, a lot of earthiness, coffee, anise, dark chocolate with a long finish. Tannins are still strong. — 6 years ago

Most certainly the WOTN, GdL never fails to impress. It’s classic Napa Cab through-and-through with a rich and expressive palate and a nose to die for. Looking forward to trying the 2016 due to the addition of some new clones. — 7 years ago

A very complex wine with big muscular structure. Earthy smell at the beginning, Graphite, pencil shaving, tobacco leaves, coffee beans, very strong tannic but change to silky after hours. Decanted it for more than 5 hours it showed a different way. Really impressive for this Sunday night. — 8 years ago

This was a very fun experiment. I bought this for 149€ due to the 2013 vintage being terrible. Would this be a waste of money or a bargin? It was a bargin. Classic high end Bordeaux nose with complexity and flavour. Lots of mint. Tailed off quite quickly but still so much to enjoy. The art of wine making should shine through on "off" years as all of the producers make excellent wines in a 09 or 10 vintage. Will definately buy more!
