Popped and poured. This was a huge surprise. The bubbles are tiny, almost non-existent. The fruit is round and quite delicious and yet it’s the acid that should get all the praise here because it does a remarkable job of balancing out the 42g/L RS. Founded in 1877 in Nuits-Saint-Georges, a little village the heart of the Côte d’Or by Jean Bouillot, a wine and spirits merchant. A blend of Chardonnay and Aligoté from both northern & southern Burgundy. Pale yellow with fragrant aromas of stone fruit and some biscuit notes.
