The Paring
Cabernet Sauvignon Blend
California, USA

Delicious, balancing 60% Cabernet Sauvignon, 19% Cabernet Franc, 14% Merlot and 7% Petit Verdot against 22 months in French oak, 45% new; it is straight-up YUMMY (pardon my French). Lively cassis, blue plum and violet play with silky tannins and lightly peppered vanilla bean. It was well-composed but surprisingly refreshing; I’d believe it was twice its 25-dollar price tag—utterly crave-worthy.

Aug 18th, 2024Last night we opened the 2016 Jonata The Paring Red Blend. From Buellton, California a blend of 50% Cabernet Sauvignon, 20% Cabernet Franc, 20% Merlot and 10% Petit Verdot.
On the nose there is black cherry, blackberry, plum, black currant, roses, chocolate, spice, graphite and dark earth.
On the palate is black cherry, blackberry, plum, green bell pepper, black currant, herbaceous, spice, licorice and earth.
This is a great QPR full bodied wine with a smooth velvety mouthfeel medium + acidity and medium to medium+ fine supple tanninsthat moves into a medium + to long dark fruit herbaceous finish. It looks as though spring is on our doorstep, we had 70 degree weather today and for the Chicago area that is a thing. What a beautiful day and I hope everyone is experiencing the same. Please stay healthy and safe and look forward to a wonderful weekend. Nostrovia! 🍷🍷🍷🍷

Apparently Jonata fruit that is baby or slightly off the value plot. Makes this a relative bargain. It was tight and not showing much at first. Tasted over 3 nights it got more expressive.

Acidic mess even on day 2,
Another experiment of people friendly wine gone wrong.
Hard to believe this is a Jonata wine,
Jeb 91 🙄🫤😳 review as follows,
The Bordeaux blend, the 2017 Red Wine is based on 50% Cabernet Sauvignon, 20% Cabernet Franc, 20% Merlot, and 10% Petit Verdot. Deeply colored, with notes of blackcurrants, tobacco, leafy herbs, and earth, it has medium-bodied depth and richness on the palate, ripe tannins, and a character-filled, balanced style that's ideal for drinking over the coming 5-7 years or so.

Bordeaux Blend from the same team that offers Jonata Wines. Dark purple color. Aromas of black currant and blackberry along with pencil shavings, dried herbs and a hint of violets. Earthy tobacco and black fruit flavors with a hint of cola. Luscious with big chewy tannins and long earthy finish. Bold, but this wine still has some finesse. Needs a decant.

Mar 8th, 2020This is one of the rare BYOB restaurants in Houston. The ambiance is lacking a bit but the food is awesome. Not remembering my previous ratings on this wine. I think I would have enjoyed more when it was younger. Not very complex tonight. Do it yourself corkage is $8. I brought my own glasses.
