Impromptu dinner: my wife happened to pick up a salmon filet, and I happened to pick up this bottle. Had poached salmon and sticky rice with carrots and white wine butter sauce. This Spanish white is mostly like a Chablis, but with an earthy/savory dimension. Very nice! I only wish I had added some cream to the sauce - this wine could hold up to more richness.

Such an amazing wine, I feel the Chablis comments are right on, but the touch of reductive notes gives it the depth of a well aged wine from a perfect vintage
