Paired with Taiwanese Five Spice Pork (Lu Rou Fan | 卤肉饭) over Jasmin rice with lightly fried eggs from our private egg factory in the backyard. Locally raised NY pork (Highland Farm, Old Chatham, NY).

Tasted over 4 days and continued improving on each passing day. Flat out delicious in the end. Best to age through 25 or more years of age in my estimation.

Golden color. Slightly pale. Stereotypical petrol nose, apricot and nectarine citrus. Smooth honey, dried peach to apricot. Mineral texture is faint on the palate. Great with pumpkin pie.

We had a 20-year old bottle of this wine with a spicy Thai curry butternut squash soup—and it absolutely sang. Against the green curry and heat of the pepper-coconut garnish, the wine held its own and instead of the initial sweetness there was only a clean fruit and limestone feel. Lots of layers and depth to this one. Don’t be afraid to age a decent Riesling: the acidity will let it grow in complexity.
