Patrick Piuze
Terroir de Chablis Chardonnay
Chablis, Burgundy, France
Nose is a little reticent at first, giving shy whiffs of Granny Smith apples and crushed rock. Just the barest hint of Chablis “brothiness” as I like to call it. As it airs and warms, it’s a bit more forthcoming. In the mouth it’s on the lighter side, but certainly showing Chablis minerally character. Acids medium low. A nice aperitif Chablis but color me a bit disappointed, for now, given the producer. Will try to check back in after a few hours.
UPDATE: After several hours, showing noticeably more fruit and depth.

Delicate - light neon yellow - racy lemon rind and salty limestone. Love this. Lacks the sourdough texture of Dauvissat but excellent nonetheless.

Aromatically closed at first, opening up very gradually. Fairly austere fruit component, lots of salt-preserved lemon character. Not lacking in concentration, just tight and yet to fully reveal fruit. But the minerality is bracing and lends the wine a certain purity. Needs another year in bottle.

Citrus, grapefruit pith, petrichor / lighter on the body that better crus, but with an appealingly sharp acidity

Manzanilla, roasted almonds and sea salt. Somehow, still true to the appellation. Nerve and energy to spare balance the oxidative elements. Different and exceptional. #piuze #chablis
