Birthday Champagne- 60% Chardonnay and 40% Pinot Noir, predominantly from Bethon but all from Sezanne. This wine is aged on a cork on the lees for five years, but is is still a very fresh, transparent and racy style.

Why not have Champagne and sushi for one in the park on a Thursday? This is my favorite co-op in Champagne, and this ambitious cuvée is made entirely from grapes from the village of Bethon in the cote Sézanne. It is aged 5 years on the lees on a cork rather than a crown cap like vintage Bollinger. It is composed of 60% Chardonnay and 40% Pinot Noir. This is a crisp reductive style that still has texture and interest- the bead and mouth feel is up with the very best in Champagne. It is also has a finish that doesn't stop, and an incredibly moreish personality... I must remember to use the stopper!

Brilliant pale yellow color with charming mixed citrus marmalade, brioche, apple and chalk aromas. On the palate, it's medium-bodied and very fresh with a creamy delicate mousse and mouth-filling yellow apple, pear, tangerine, lemon, and a hint of hazelnut flavors. Long citrus driven finish with aa appealing minerality that brings to mind a mixture of chalk and saline! Blend of 60% Chardonnay and 40% Pinot Noir; Aged for five years on the lees. Great QPR at $35! 12% abv
