It’s silky-smooth with a fine bead of bubbles, as tension quickly mounts through a wave of saline-tinged acids and minerals that cut through with laser-like intensity. A salty flourish defines the finale, while the palate is left watering for more. This is intense on its own, but it would be dreamy with any number of rich, fatty or fried foods. The N.S. Della Neve is a Metodo classico-produced blend of 60% Nebbiolo and 40% Pinot Noir that finishes at just one gram per liter of residual sugar. Disgorgement date: February 28, 2022. A 50-50 blend of Pinot Noir and nebbiolo gives this brightly sparkling wine a beautiful color, crisp acidity and cherry and strawberry with a hint of peppery spice flavors. Lovely wine, priced for its rarity do not a great bargain but a lovely drink
