Vajra's NV Extra Brut Rosé N.S. Della Neve is incredibly characterful, sizzling out of the glass with leather, mesquite smoke, blackberry and white pepper. A blend of 50% Nebbiolo and 50% Pinot Noir, the structure of the former comes through loud and clear through bright acids and firm, powdery tannins. Sour berry fruit and mentholated herbs meet with salty stoniness in the mouth, elevated by a lively, fine mousse. It's not the most finessed sparkling wine you'll taste, but it's certainly charming. It’s silky-smooth with a fine bead of bubbles, as tension quickly mounts through a wave of saline-tinged acids and minerals that cut through with laser-like intensity. A salty flourish defines the finale, while the palate is left watering for more. This is intense on its own, but it would be dreamy with any number of rich, fatty or fried foods. The N.S. Della Neve is a Metodo classico-produced blend of 60% Nebbiolo and 40% Pinot Noir that finishes at just one gram per liter of residual sugar. Disgorgement date: February 28, 2022. A 50-50 blend of Pinot Noir and nebbiolo gives this brightly sparkling wine a beautiful color, crisp acidity and cherry and strawberry with a hint of peppery spice flavors. Lovely wine, priced for its rarity do not a great bargain but a lovely drink

Berries and cream. Nice round flavor with soft edges that finishes long and clean. Great acidity. This is my first Nebbiolo rose but won't be my last.
