At first from coravin, this was an “ugly duckling.” I was shocked as it presented as disjointed. Two weeks of rest got its mind right. Displays briny, salinity on the nose and palate. Subdued orchard fruits present on the mid palate with a hint of almonds and acidic tension. Dry as a bone and strutting… thanks @Lyle Fass

Nose is refined and clear but holding back. But also exotic. Bok choy, green lettuces, very mineral but wide and expansive. Luscious and deep. The ripest of all the wines so far. Richness. Elegant richness.

Huge stanky, classic Chablis nose of seashells, ocean air, mineral richness, some creamed corn, green apple skins, wer earth, tree bark, wet stones and so much breadth and pungency. Unreal clarity here that is just stunning. Palate is elegant ripe and rich but then immediately finishes with a massive crescendo of minerality that explodes into a long complex finish. Fabien leveled up in 2021 big time. Wow that nose is so complex and evocative. Just stunning. Such focus, grip and structure. Wow. Wow. Now after air this has gotten even more refined. Nose is gorgeous with the most refined sea air. Like a perfume of sea air. Green apples just ripe. Palate is electric with just incredible acidity, focus and complexity. It’s a mineral bomb basically. So dense and complex. Just ridiculous wine.
On day 2 the nose is a gorgeous perfume. Gorgeous green apple. Amazing focus and linearity. Brilliant

Very pretty translucency of lemon in the glass. Pale and poised.
Playful, zippy, yet contained and linear. It’s like someone said indulge your creativity but here’s a constraint so that you stay on task.

Orchard fruit and maybe some light citrus fruit like kumquats. Underripe white peaches. Also reminds me of these light yellow raisins from the mountains of Hunzah my mom sometimes brings when she visits. Beautiful.

Palate: classic dauvissat elegant density. Mashed yellow flowers. Delicious. Almost a willi Schaefer balancing tartness.

Sea breeze, mineral, subtle lemon as well, youthful, excellent acidity, needs some aging, very lovely tonight.
