Incredible producer, could be mistaken for more luscious burgundy but the acid never ends, literally. Its cheese/lees heavy, lemon/lime, tart and fresh.

The 2016 Domaine Francois Raveneau ‘Foret’ Chablis is a massive wine that is wound up tighter than a top at the present moment. Needing more than an hour decant to slowly evolve aromatically, the wine gradually takes shape in the glass with bright nectarine skin, green apple, clove and wild mushroom tones that complement the beam of salinity. The palate has incredible energy and freshness, showing bright kumquat zest, diatomaceous earth, peat moss with flinty undertones and a sterling minerality. Fantastic and intense in its youth, this really needs another year of bottle age to fully get going. Drink 2020-2035

Yellow gold color, heavy in the glass. Floral nose with notes of lemon, honeysuckle, chalky dirt, spice and a little mandarin orange. Palate staining in the mouth, very rich but still chewy. Nicely evolved as it looks like the fruit forwardness of this 05 is finally starting to be matched with nice acidity and structure. Will get better with more age.
