You want fatty, game meat with this...not seafood. Nonetheless, I found myself elated when a couple sent this bottle back (despite them bringing it in and paying corkage...bad somm, bad!). The tannins STILL need time to soften, but the crayon-like minerality has passed, so I will finish this on my day off - which is Tuesday!
