Bottling date: 1st Semester 2012.
Cork was hesitant to leave the bottle with only the most minimal pop.
Pours a salmon tinged gold with nearly no visible mousse.
Nose is all savory, aged white burgundy, toasty, hazelnut, with some red fruit/prune elements.
Palate is soft, evolved, savory. Pretty good paired with chicken baillontine two ways, stuffed with Cajun style bread stuffing and sauteed leek/quinoa.
Not incisive, fresh or crisp ina my tradition sense. More of a wine to think on and which could use time in glass and at table to understand.

A very pretty pale gold in the glass with a wide brim. Varietally correct nose of toasted brioche, green apples, pineapple, and lemons. Tangy, citrus acidity in this Pinot Noir, Chardonnay, and Pinot Meunière blend. Packed with stone minerality, there is definite weight and structure on the mid-palate. On the palate, more toasted bread, red apples, tangerine, fresh cherry, baking spice, lemon, and lime. Medium sized bubbles with a pleasantly long finish, this is a wonderful champagne.

Birthday bubbles offering a nose of yeast, wood, apple and chalk folding into a flavorful palate of green apple, almond and limestone. A delicate rose gold colour reminiscent of ginger-ale. Good acidity with a solid well rounded finish.
