Each year, Cabernet Franc superstar Bernard Baudry makes a small amount of Chenin Blanc that is gone in the blink of an eye. All of the Baudry family's Chinon vineyards are organically farmed using many biodynamic practices, and the winemaking is similarly low intervention. From young vines planted in clay and limestone, his Chinon Blanc presents more minerality than fruit, and a diaphaneous, melted honey-like texture.
