This was opened and we enjoyed a few glasses before recorking and reapproaching 24 hours later, at which point it was really singing. Yellow peach, pear and medley of orchard fruit, layered with pressed yellow flowers, dried persimmon, and notes of vanilla and bourbon. So delicate. Such fine bubbles. Dark purple/black color. Intense aromas of blueberry, vanilla, smokey bacon fat and caramel. The bold palate is quite complex. Flavors of blue/black berry fruit, dark chocolate, maple, ripe plums, black pepper and coffee. Rich and plush. Mouth coating texture. Long finish and chewy tannins. Tart apple aroma. Looks like pale spun gold with medium bubbles. First sip is fine and clean, with a hint of apricot and yeast. Tangy finish becomes more pronounced with further sips. — 5 months ago
