Mystic 'Everyday Saison'. Chelsea Mass. Retrieved from my Boston trip as a beer that would suit my palate. Great suggestion. Not many Saisons can be called session. Made by Emile Peynaud, this is a world class Greek Cabernet Sauvignon easily mistaken for Bordeaux. After 11 years the wine shows classic muted cassis, loamy earth, unique dustiness and an elegant completeness that is difficult to describe, some forest floor/compost, but clean and crafty with plenty of fruit and verve left for my palate. The wine begs for roast pork or a flat iron steak with reduction and mushrooms. A Cab for Burghounds, mature, soft, complex with cut in the finish. Brilliant for the money. — 11 years ago

Apple, fig, quince and French oak show playful and integrated completeness in the nose. Very intriguing and crafty aromatics for the price point. Not a lot of wines is show to real wine geeks for about $20, but this one's special. Rich enough to be Chard, structured enough to be pure Santa Maria. Balanced and crafty in the mouth with a nice mix of breadth and acidity. Serve with goat cheese fritters or fried squash blossoms with nectarine jam. — 12 years ago
