This is not psychic wines. Bardos is a cider producer in Sonoma County, CA. Anyway this cider is outstanding. The next of minerality, seaside flavors, also some tart stone fruit, pears, and a ton of funky barnyard. Buying scidity but it integrates really nice. Aftertaste is sea brine, lemon/lime, tart green apple skin, and pears. Fascinating. Love it. — 24 days ago
Highly-extracted but under control (barely). Nose has scorched earth, spice-spiked maple syrup, hot dusty sandstone, ripe blackberry, roasted fresh green herbs. Ripe on initial entry, then turns tannic and structured with chalky-textured tannin and discernible bitterness on the finish. Needs a big hearty winter stew. Brooding and warming; perfect for winding down after a day in the snow. Inky and dark, with wild, brambly blackberry, black raspberry jam, baked plum, wilted violet petals, and savory, umami notes of white pepper, Kalamata olive, bay leaf, hoisin sauce, star anise, fireplace, and smoked brisket. Subtle coffee bean and bittersweet dark chocolate notes show up on the finish. Velvet-smooth with briny acidity. Immensely satisfying winter wine. — 7 days ago
