Knights Valley Cabernet Sauvignon 2020

On the nose, this is blackberry, red cherries, red currant... Cocoa powder? On the palate, the blackberry and current is still there, but certainly some herbal notes as well... Green pepper... Dried sage... Medium body and tannins are quite pronounced at this stage... Another couple of years may have been preferred to soften a bit though this may be at the expense of the great currant up front... I feel there's some smokiness in the texture that I like here... The finish is long and makes me think of tree bark... A nice pairing for us tonight with flank steak. — 8 days ago

Nice for a steak dinner at a restaurant for a reasonable price. Pop and pour Zinfandel blend. Deep color, fruit and spice aroma. Palate is heavily red Zinfandel with dark berries, plum, and spice - pepper with a hint of nutmeg and vanilla. Balanced tannins and acidity. Short but pleasant finish. — 2 days ago

I had bought this wine for my wife who likes robust wines  - what a pleasant surprise in addition to its body. It had complex bursting flavors. Consistently flavourful from the first taste on my lips to the Gargle and aftertaste. I matched it with sirloin steak from an elk and some mushrooms with garlic, and the universe was as it should be.  — 3 months ago

@Paul T- Huntington Beach when you keep a wine around for three days how do you store it? Just cork? Little suction thing to take air out? Argon? Cellar temp? Wide open in bottle? Other? Asking for a friend

I just cork it back up, I stopped the suction & gases. I would only use those on wines that are already to go but we just couldn’t finish. But with these type of tight wines I leave at room temperature overnight to get some advancement, with this one I put into the cooler on the 2nd night once I realized we were not going to be home.
Every bottle is different, you just know from the first sip after doing this for so long
