2021/5/16 with rib steak grilled over nara and charcoal, fava beans with pecorino, mustard green salad, and focaccia. This almost feels younger than the 1999 Combe - or at least without that deep bottle bouquet. Instead there is penetrating, brambly red fruit with hints of iron and blood. Day 1 Replaced cap with Vinloq stopper and served with preservation
👃 Zero candybar! White chocolate, peanuts, and almonds were present on the sweet, candied nose
👅 Sweet & creamy on the rice driven palate. Very pleasant
Love to pair cloudy sake and sushi. In this case, the sweet and umami flavors from the sake lees played well with cooked fish, raw fish, sushi rolls, and even tempura
Remaining 150mls refrigerated x 7 days under Vinloq gas
Day 8
Dinner included unagi, tamago, lotus root and bean curd skin in dashi broth, grilled cabbage, and turnip soup. Again, this Hanatomoe played well with everything. Did not lose a step over 7 days in the fridge

This seasonal sake is called “Jumai Ginjo Namzake” from the Harushika Sake Brewery in Nara, Japan. It is insanely smooth sake that has a subtle cherry fragrance and aftertaste without it being too sweet. It’s one of the best sake’s I’ve tasted! — 6 years ago
