Ethereal. Every time I had one of his wines it blows me away. Granny Smith Apple, underripe green pear, white flowers, a hidden depth from the lees. Sharp almost effervescent acidity that’s perfectly balanced with fruitiness. — 6 years ago

The perfectly balance of minerality, acid and fruit. Petrichor, crushed rocks and saline are dominant, but orchard fruit, specifically green pear and white peach shine through. There is a subtle hint of delicate white flowers, lily of The Valley and while rose. Given the high acid and salinity, this would pair perfectly with oysters or a creamy seafood dish.
