Delicious. Happy 248th birthday America & all Delectable users.
Nice, soft mousse, slightly rich, gentle co2, green apple, lemon meringue, lime zest, tropical melons, both white stone fruits, kiwi, underripe pineapple juice, vanillin, some minty & dry herbs notes, semi-moist chalk power, alluvial limestone, sea spray, soft white spice, bread dough, light yeastiness, yellow florals & lilies, jasmine with fairly heavy greens, nice, round, soft acidity and a well balanced, structured, tensioned and smartly polished finish that last ninety seconds.

Pale straw lemon color with frothy mousse and lively bead of bubbles, long lees aging. A nose of fresh fruit with yeast, nutty notes and floral scents. On the palate flavors of peach and citrus flavors with biscuit tones. Nice balance with acidity, delicate textures, medium+ finish ending creamy with toasty oak and chalky mineral character. Pair this with shrimp cocktail. — 6 months ago

So many bubbles! Really impressive. Very complex. Cream, brioche, citrus, good amount of saline, herbal honey, honeysuckle. So well integrated at this moment. Better with 3 hours of air and closer to room temperature. Long finish with lemons, almonds, tangerine, bit of grass. Definitely one of the best champagnes I’ve had. — 4 months ago
Lovely to finish a long evening.
Paired w/ shortbread w/ Macadamia nuts.
I like their craft. This is good but will ascend for 10 years.
Reductive in style. Pineapple, lemon, grapefruit, lime zest, white peach, light tropical melons, cheese cloth, cream, some mint, bread dough, yeast, limestone alluvials, sandstone, light white spice, sea fossils, baguette crust, yeastiness, bread dough, yellow lilies, jasmine, Spring flowers, round crisp acidity, well balanced, nicely knitted, with a smartly polished, elegant finish that’s lasts two-minutes. — 6 months ago
