This 7 year old Cabernet Sauvignon based Bordeaux blend from Paso Robles feels very fresh and young. Soft and elegant. Nicely balanced with nice complexity and mouthfeel.
I had this vintage 3 years ago and it is drinking much better now. Peaking now, and good after 15 minutes of airtime.
Easy drinking and good by itself or with food. Love to see such low alcohol reds from California.

N: Lemons, ginger, banana peel, very fresh, like a just passed thunderstorms sun. You can smell the oak, but it’s like a ghost in the background.
P:Lemon custard, ever so light, creamy, tart, long finish, slight wood. He was really talented.

If served this “ blind”, very few would peg it as a Cali Chard. A stylistic response to criticism of previous, over the top Chards.
With time and air, some flinty mineral goodness appears along with the sensation of citrus pith. — 5 years ago
The Chichibu Distillery in Hokkaido Japan is boutique in the extreme with just 14 employees and two small copper pot stills. This whisky is a blend of Japanese material blended with Whiskies sourced from around the world including Canada, the USA, Ireland and Scotland. Typical attention to detail has produced a meticulous blend showing more highland grainy flavours than the peaty west coast flavours of Scotland. If I ever return to Niseko for skiing I will make an attempt to visit this wonderful little distillery in Hokkaido. 46% ABV. — 5 years ago
Here are my tasting notes for this wine. Visual:Good clarity with a hue of dark red almost black, with predominant legs
Nose: Hints of plum and raspberries
Body: medium body
Pallet: Baking spices, pepper, with a balanced finish
Pairing Notes: Enjoyable red wine that pairs well with a variety of foods like spicy cuisine and cheeses. Crab dip, bean dip, ghost pepper or jalapeño cheese, chicken, fish, and garlic bread, also pairs well with this wine unlike other red wines. — 3 years ago
