Equilibrium Brewery

Didier Dagueneau

Pur Sang Pouilly-Fumé Sauvignon Blanc 2020

Most delicious of the lineup. It really clicked for me, makes me understand how low toast oak can jive with a restrained, pristine sauv blanc character that’s the house signature. Enough air coaxes out apple and a hint of ginger, but it’s that equilibrium between fruit, oak, lees and structure that strikes the match — 5 months ago

"Cuvée Corcelette" Morgon Gamay 2019

The least Beaujolais-like of the lineup, but in a good way. I’d call it 1er cru cote de Beaune, maybe Savigny. Extremely balanced, it’s an equilibrium between intense red fruit and pretty florals, violets and lilies. The palate is so delicate, pretty tannins and delicate fruit. Zero funk — 3 years ago

Domaine Eden

Santa Cruz Mountains Cabernet Sauvignon 2016

J. Kim
9.0

Surely one of the finest Cabernet made in California in terms of the aromatic complexity, but one can find better wines for less from Bordeaux. There is not enough mineral tension force one gets from the top domaines in Bordeaux, Burgundy and Rhone. Everything from Mount Eden is imbued with innate sense of integrity and equilibrium. — 4 years ago

La Landonne Côte-Rôtie Syrah

inky, saturated, dark. Magnificent.
The nose full of violets, crushed rocks, black olives, cedar, black cracked pepper. Alcohol is medium.

On the palate, a masterpiece of tannin management, full throttle yet perfectly integrated, melting in dark ripe berry giving a wholesome mouthfeel and a highly pitched acidity giving lightness and brightness to the overall massive texture.
The full stem gives a lightness to the whole ensamble that is stunning and a masterclass of equilibrium and definition alike.
Buy by the case.

Dr. Loosen

Dr. L Mosel Riesling 2020

Are there better rieslings out there? Sure. But you'd be hard-pressed to find a better one under $10. Dr. L is always solid and balanced. Yes, it is on the sweet side (the 8.5% ABV reminds us of that), but there is a flinty minerality present that helps maintain equilibrium. 100% Riesling. 1/16/22. — 3 years ago

Vieilles Vignes Sancerre Sauvignon Blanc 2018

Year in and year out, this is one of my go-to Sancerres. Nose is super fresh, with equilibrium between crisp, just-ripe orchard fruit, a hint of green herb, and clean, stony minerality. Nice balance in the mouth as well. The fruit is ripe, but not too ripe, and it’s bone dry with a refreshingly chalky stone finish. Good (medium +) acids. — 2 years ago

Château Petit-Figeac

Saint-Émilion Red Bordeaux Blend 2015

Beautiful warm and deep fruit. Balsamico, black cherries and shoyu. The nose is uplifting with cassis and boysenberry. Tannins are totally integrated and the oak is subtle. Equilibrium explained. — 4 years ago
