Okay, so we’ve had Gentaz and Verset along with a ridiculous collection of other truly great wines; the likes of which could have easily stood very much on their own and been the showpiece of the night. But we weren’t finished yet. So why not another mythical creature? Chave’s Vin de Paille is so rare. It’s only been made a dozen or so times in history and always in tiny numbers. The 1990 Vin de Paille pours like a liquid Tiger’s eye with notes of persimmons, golden raisins, and peach crisp. So rich and yet, not cloying. An amazing pairing with foie toast and candied chestnuts. Drink now through infinity. Honestly, I don’t know how a wine like this ever dies unless it lives a hard life. — 9 months ago

Fines bulles frisantes pas un léger gaz carbonique, jaune paille, reflets verts. Une salade de fruits au nez, litchi, pêche, fruits exotiques. Une bouche piquante par le résiduel de gaz carbonique. La finale est sucrée. Il doit être bu très froid car en se réchauffant le sucre prend le dessus ce qui agresse et rend ce vin d'apéro et de terrasse perdre tout son charme. — 5 months ago

Superb dress, brown gold, thin nose reduced nuts, apricot kernels, ginger, straw, vetiver, honeysuckle, of a beautiful finesse with vivacity. The energy of a sweet young wine in the force of age. Balances between polite but still lively young notes, and already an evolution that is being felt. Superb as much to start with as for dessert or on a marbled cheese.

Superbe robe, or brun, nez fin réduit noix, noyaux d’abricot, gingembre, paille, vétiver, chèvrefeuille, d’une belle finesse avec de la vivacité. L’énergie d’un jeune liquoreux dans la force de l’âge. Equilbre entre notes de jeunes polies mais encore vives, et déjà une évolution qui se fait sentir.
