Overview
A gastronomic Champagne crafted by Besserat de Bellefon, known for producing wines designed specifically for food pairing. This cuvée is composed of 45% Pinot Meunier, 30% Chardonnay, and 25% Pinot Noir, with disgorgement in January 2022. The house style intentionally uses a lower dosage during secondary fermentation to create a softer, finer mousse.
Aromas & Flavors
Intense yeasty notes, lime blossom, fresh citrus, and baked brioche. With air, hints of honeysuckle, toasted hazelnut, and subtle pastry cream begin to emerge.

WA Review 95 points ( dense and structured, yet still vibrant and very pure, the 2007 Abelard is 90% Grenache and 10% Syrah. Loaded with deep blackberry and black cherry fruit, licorice, crushed stone and hints of roasted herbs, it is full rich and concentrated, with knockout precision and focus. It is serious stuff and still a baby. Drink it over the coming decade)
