Almost a year to the date from my last 07 Preuses from Dauvissat. I love this classic vintage for Dauvissat. After sufficient aeration which it definitely needed, 2007 Preuses is excellent tonight with an incredible combination of power and elegance and terroir expression, undeniably Preuses. With air it gains in weight, precision and most notably in vibrancy, electric on the palate by the end of the night. It flaunts a complex and layered bouquet of lemon cream pie, beeswax, lavender honey and an algae-like savoriness. The palate is pure, textural and vibrant with racy lemony acids and a long saline driven finish. A perfect example of why we love aged Chablis!

Jan 1st, 2022I can say for Raveneau I prefer ‘08 over ‘07 but for Dauvissat it’s a much closer race, and this electric ‘07 supports that notion. Intense and ultra complex nose upon the first pour from the decanter. Really raring to go.
It’s a classic vintage for Dauvissat with its oyster shell minerality, sea spray salinity and an attractive algae like savoriness, all backed by a bright lemony acid spine. It has all the elements you’d hope for in this Grand Cru. An incredible combination of power and elegance, elite midpalate depth and a finish that goes on and on. Proving again to be true, I continue to prefer Preuses over Clos in most vintages.

Light yellow gold. Floral nose with notes of apricot, stone and a little iodine. Reasonable structure with light acidity and fruitful finish. Very quiet and not showing much, even with several hours of air.
